you can leave it open to your friends, or people you've "met" (recently played with), or have it invite only. if you leave it open, they can join while you're in the game. i don't remember off the top of my head if you can have it open for all of xbox live though. not sure how they'd find you if you could.

I just played Legendary Brawl and it was king of the hill on ghost town. THey spawned me across the map EVERY time.

 

dude seriously some one jump on i just got booted by a 11 year old.
