When you engage the clutch, the engine starts turning over and the alt is generating current... basically the car thinks its running like normal and fires right up.
When I do it, I let the clutch out and push the throttle in at the same time. If you get the timing right, the car smoothly cuts on and starts going under its own power.

I thought it was that the car can be run off the battery only without an alternator, just that you'll drain your battery after a while. I remember when I was in FSAE we used only batteries in our car with no alternator....
